BLUE CHEESE DEMI-GLACE

Yields: 1 Cup

Comment:
Demi-glace is an essential sauce in classical cuisine. It is not only used as a sauce by itself, but also as an ingredient in many other classical sauces. Adding ingredients such as blue cheese is a great way to enhance the flavor of the demi-glace.

Ingredients:
2 tbsps butter
1 large shallot, minced
1 tbsp minced garlic
¼ cup red wine
1 cup veal demi-glace
2 tbsps Bittersweet Plantation Dairy® Blue Cheese, crumbled
salt and black pepper to taste
granulated garlic to taste

Method:
In a sauté pan, melt butter over medium-high heat. Add shallots and minced garlic then sauté 3–5 minutes or until wilted. Add red wine and reduce to half volume. Add demi-glace and blue cheese then bring to a simmer. Whisk until ingredients are well blended. Season to taste with salt, pepper and granulated garlic. Continue to reduce until sauce is slightly thickened and all flavors are developed. This sauce is best served over grilled meats.
